^^You can purchase 22 rounds for a rifle that won't damage the pelt. I haven't tried it yet, but it might mean I can hunt a rabbit without mullering it. 
 
Whilst the game is magnificent in its atmosphere, visuals and details; I can't help feel it is more of the same. I am enjoying myself and Rockstar have built something that is truly immersive. However, foraging for food reminds me of metal gear sold on the PS2 years ago; the go here and do this is like every other game, leading to long journeys doing not a lot. Random encounters and hunting are lifted straight from GTA5. I'll play the story mode through until completion, but I am not sure i'll bimble about causing carnage like I have done in previous open world games, or aiming for 100%.
 
Then again, I might change my mind later.

I am pretty pro at hunting considering it's all I've done since starting the game.
 
bow with small game arrow is ok but really only suited to the smallest animals - it won't kill a rabbit in one shot.
 
the varmint rifle is good for all small animals like rabbits, badgers, etc.
I'm pretty sure it takes most birds out of the sky with 3* rating intact as well but not sure it matters to the quality of their feathers.
 
in fact, here's a list explaining:
 

Bow with small game arrows 
Small = Bat, Bullfrog, Chipmunk, Snake, Squirrel, Rat and Toad
 
Varmint Rifle
Moderate = Armadillo, Badger, Gila Monster, Iguana, Muskrat, Possum, Rabbit, Raccoon, Skunk
 
Repeater + Bow with normal arrows
Medium = Beaver, Coyote, Fox, Pig
 
Rifle + Bow with poison arrow
Large = Alligator (Small), Big Horn Ram, Boar, Buck, Cougar, Deer, Goat, Panther, Peccary, Pronghorn, Sheep, Wolf, Turtle
 
Scoped Rifle + Bow with improved arrow
Massive = Alligator, Bear, Bison, Bull, Cow, Elk, Moose, Ox

 
legendary doesn't matter - smash it's head in with a 5 shotgun shells if you want - the pelt / carcass is legendary whatever. 
 
as for tracking - most legendary animals have a pretty straightforward tracking path - it's normally track for a bit, cloud of orange bits (indicating shit, fur, bones, etc.), track a bit more, orange thing, track, orange, track - then you should see the animal. 
 
sometimes they don't spawn if there is a camp / any other activity nearby. you might need to leave and return to the area when it's night or the other 'action' has gone.

I got some next quarry challenge now which calls for a perfect specimen rat, woodpecker and a cardinal(?). I thought the squirrel b2b rabbit was hard enough but the fact you have to get them all in close succession and post them off before they rot is long.

I read you can craft a talisman with the legendary fox pelt that slows the degradation of carcasses. Could be useful for that challenge.

Makes sense really, it's probably a lot harder to create hype around an unproven franchise whereas if your last game is good all you really need is some pretty footage and a pair of horse balls.

Whenever I try to find a legendary animal they aren't around. Are rabbits only there in the morning or something? And how do you catch legendary fish?

I have found a few, don't ask me what prompted it being able to happen. I just had a notification saying I was in a legendary animal territory. 
 
The debt collection mission where you go after one made me jump lol.
 
The bar fight mission with Hosea was ace

You need to speak to Jeremy Gill the fisherman. After you’ve done this, the three special lures become available at the bait shop.

I've done that as I have a list of legendary fish to send to him

I've been having an issue where it will only let me use the crickets as bait and all the others are greyed out, no idea why

Dunno about that one, the only thing I can think of is that it may only let you use crickets on the mission with the Native American guy in camp.

Been fucking about in Chapter 3 hunting all the legendary animals and perfect pelts for satchels and trapper outfits. Decked out with full satchel upgrade and the clothes I wanted so I guess it's time to push on with the story now.

The hunting has been really fun and padded out this part of the game nicely. Got a bit fucked off hunting Moose though, those things are fucking rare as shit. Found one after about 6 hours of searching locations and it was only 2 star ffs.

Eventually found a 3 star after laying down bait.

Varmint Rifle will kill any 3 star rabbit without degrading no matter how you hit it. I normally hit them from horseback and then hop off to skin. I can't be sure without checking but I think squirrels require small game arrows with the bow to keep 3 star.

Mentioned before but use your binoculars / scopes to spot an animal and then study it and then track it. Then you will get the info (press R1) and it tells you exactly what weapon you need to get a clean kill.

Bigger animals require the right weapon and generally head-shot or shot to the heart to retain perfect pelts.

There is a talisman that helps with keeping 3-star pelts as 3-star; I went out the way to get it and it has helped loads with hunting. I can't remember which legendary animal you need though.
 
Chapter 3 and 4 are probably the best chapters tbh; all goes to shit after that.

I thought you had to get the rabbits from the front with an arrow which is well tedious, will try out that rifle, sayf rayva. Tbh I'm not sure why I'm even bothering with the challenges as there's no way I'm going to go back and get gold in all the missions so I'll never get the platinum
