Reading through this thread I badly need to up my bbq game. Impulse bought a Weber master touch on black friday that’s been sat in the garage ever since, gonna christen it this afternoon for sure.

Gonna start simple with some burgers and that, anyone got a good recipe? Was just gonna chuck some finely diced onion and herbs and that in with the beef and see how I get on.



Yeah you don't need to go too fancy for burgers to be good. Maybe some liquid smoke. You could always chuck some chillis in too if you like it spicy. I never bother with egg or breadcrumbs or any of that nonsense. Don't skimp on the salt & pepper.

So did the brisket, same dry rub as last time but smoked over mesquite, hickory and oak for 8hrs. Served with the S. Carolina BBQ sauce upthread.

Also smoked some corn on the cob for 90mins then tented it in foil with shit loads of butter for 30.

Was lush, got a few weekends of DIY lined up so makes perfect sense to combine that with an all day smoke.

Made some home cured and smoked bacon on the bbq last year. Free range pork belly. Best bacon ever.

Chicken is easier than brisket / pork surely? I did a whole chicken ages ago, probably four or five hours, and just waited for the internal temp. Treated the same as anything else. 
 
I smoked Turkish spiced marinated chicken thighs on two skewers once. Had it in gyros. It was fucking unreal.
 
Your brisket looks superb Whagwan. It's been ages since I smoked anything. Desperate to find time to do a brisket ASAP.

Me too. I have gone crazy with it recently. Got a massive rosemary bush by the back door- I just fucking smoke everything with it, the smoke is so sweet it's mad

I tried to do a 1kg small brisket the other day but got quite pissed and didnt look after it properly. Left it on for too long. Dry 
 
All I could do was reheat it with a load of BBQ sauce to save it. Sadness. Supermarket brisket is just shit isn't it. 
At least Tesco pork shoulder has plenty of fat on it, so I've never had a problem with it.

Some are better than others. At least if they have a butchery counter you can have a look at it before you commit.

Nothing beats your local butcher though.

Precisely that:
 
To begin with, all supermarket meat supply chains are not the same. The big three supermarket chains (Asda, Sainsbury's and Tesco) run buyer-led adversarial supply chains where they drive down prices for consumers by capturing the margins of independent processors that produce a changing mix of joints and products for several customers. Morrisons runs a vertically integrated meat chain where it owns and profitably operates its own abattoirs and processing plants, which are fully loaded and sell the whole animal to the one customer.

When I used to work in logistics the drivers would tell Morrisons was the worst for sending produce back. Very meticulous and if the pallet was damaged, sometimes not even whats on it, the actual pallet was broken, the whole trailer was rejected and marked as a failed delivery.

They were the only supermarket unaffected by the horse meat fuck up.

Fired up the smoker yesterday for first time this year.

Whole deboned chicken. 2 sausages. 2 pork belly slices. Salmon fillet.
Think I would flash the chicken on a direct heat grill to crips up the skin next time. Flavour superb but needed crisper skin.
Tried to be experimental with the veg and smoked a cauliflower. Took on far too much smoke, not the best.
Corn was amazing as standard.

Slow braised some beef short ribs in wine and stock and then finished with a homemade BBQ glaze under the grill yesterday. No photos, but they were amazing.
