Thing is, this new particle is thought to break down into two further particles....
It would be awesome if the scientist who discovered what those were was called Dr Homo.

(technically it could also decay into different pairs of particles - W bosons, quarks, but at the energy level they are looking for it at CERN, a pair of photons is the likeliest decay).

Bosons may be either elementary, like photons, or composite, like mesons.
mesons are one quark and one antiquark
so it wouldnt decay into photon
edit: i may be wrong thats just my understanding of it... i study audio technology

Yeah, you're pretty much wrong. 
Don't think of it as being "made of" two photons.
Just that the energy used to create the Higgs excitation isn't high enough to sustain it, so it decays pretty much immediately.
That's why they can't see the Higgs directly, its gone too quick.
But what they can see is the decay paths left behind.
The standard model predicts various possible decays depending on energy levels used, as well as the collided material.
The energy level they are using at CERN to create the excitation would most often create a decay path of 2 photons.
