I find it so difficult to drink that much, certain fruits and other foods contain water but its not enough according to many health experts.

I drink anywhere between 3-5 litres of water a day. But I train in Muay Thai 5 days a week. Took a while to get my body used to intaking that much water but I don't think I've ever had a headache since.
I drink according to the colour of my piss. Anything darker than light yellow and it's ushtey time.
this is the best thing to go by. in the army they are told not to wait to feel thirsty to drink, but to drink as soon as your piss starts turning yellow.

This is not true. Because of the diuretic effects of caffine, the water is not absorbed and is counter productive as it flushes out liquid already inside you. Also soft drinks (anything carbonated) are horrendous for you.

No it's completely true. Notice I said mild diuretic. It's utterly negligible and a total load of bollocks that it's counter productive. I agree that soft drinks aren't good for you, but in terms of liquid it still counts.
I don't think I could ever manage that. At present, even making an effort I can only really do between 2 and 4 pint glasses of water over the course of a day... my capacity for food is pretty high but I've never really been able to match it in terms of liquid intake.
